Locust beans are pods of either the African Locust bean (parkiafilicoidea) or Mediterranean carob tree. The pod consist of a Woody husk that is sweet and contains hard, shiny beans. The beans are used for the manufacture of gums and oils in cosmetic companies.
Ogiri okpehe/ Locust beans is a traditional condiment used in some traditional cuisine. It is a seasoning made from fermented oil seeds such as sesame seeds or legumes.
HOW TO MAKE OGIRI OKPEHE/OKPEI/DAWADAWA:
• Wash the ogiri okpehe seed thoroughly in clean water.
• Cook the fluted pumpkin seeds or sesame seeds very well, untile they get softened so that the seeds coverings can easily peer off for easy removal. After that, wash the cotyledons and pour in a sieve to drain excess water.
• Then add the cotyledons into a canister or vessel, then cover with Local leaves like banana leaves e.t.c and allow stay for at least 4 days to 5 days to undergo fermentation.
• Place the vessel under sun light during the process of fermentation so as to hasten up the fermentation process.
• Once the fermentation process is complete, ground the fermentated seeds into small balls and allow to dry under the sun.
• Once it’s sun dried the ogiri okpehe is ready to use.
