Ukazi leaves known as African Wild Spinach or Afang leaves in Nigeria is a green leafy vegetable, tough and glossy.
It is used as a base mixed with other vegetables for many well known Eastern Nigerian Soups e.g Afang or Ukazi Soup. It can also be added to Egusi, Okro or Ogbono Soups. It has a stiff consistency and so can tolerate long cook times.
